The nights are getting chilly and it’s time to break out that comfort food! This is at the top of the list from the men in my family. When my boys get home from practice, they want FOOD! And this is the perfect meal that fills that hunger void.
This recipe is a modified version of my mom’s. I can’t tell you if it is an authentic Hungarian dish or if my mom made it up….Okay just hung up with mom and yup she made this up as well as the name. Does it matter? No, it is a delicious, hearty meal and is one of my comfort foods.
+Another kid tested and kid approved meal.
Get in the kitchen and make sure you have the following:
Large Deep Frying Pan With Lid or Dutch Oven Pan With Lid
1 1/2 lbs. Ground Beef
3 Tablespoons of Raw Oats
1 Large or 4 Small Potatoes (diced very small)
1 Quart Stewed Tomatoes or (1) 28 oz. Can
1 Heaping Tablespoon Minced Sweet Onion (or dehydrated)
4 Teaspoons Hungarian Hot Paprika
1 Teaspoon Garlic Salt
1 Teaspoon Celery Salt
1 or 2 Sprigs of Parsley
Grapeseed Oil for Frying
Dash of Sea Salt
Dash of Fresh Ground Black Pepper
Mix Ground Beef in large bowl until well minced. Add oats, diced potatoes, minced onion, garlic salt, celery salt, parsley, paprika and mix well.
Form small hockey puck size patties (they shouldn’t be larger than a biscuit). Place on parchment paper or tin foil lined tray. Chill for approx. 15 minutes. Drizzle oil in large deep frying or Dutch oven pan just enough to lightly coat bottom of pan. Heat oil on high for 40 seconds, with tongs add each patty to pan gently and brown slightly on both sides (approx. 3 minutes per side).
Don’t worry if juices are not running clear. Now remove patties from pan and discard of all pan drippings. Place patties back into the pan and pour the entire quart of stewed tomatoes over the patties.
Give each patty a dash of salt and pepper, cover with lid and place on low. No need to flip patties, just let them simmer for 30 minutes untouched. Remove from heat and let stand for five minutes. Place in serving dish and dinner is served.
**I sometimes dice up one more potato and add to the tomato mixture; who doesn’t like more potatoes?!?
These are even better the next day.
Happy end of summer!
