It’s Monday, and meatloaf is what’s for dinner.
There are so many different recipes for meatloaf that it really depends on what area of the country you grew up in to determine the ingredients. Which explains why mine has potatoes in it. Growing up in the Midwest, my mother put potatoes in everything! I noticed a lot of the meatloaf recipes that originated in New England have carrots in them. So it’s really a free for all. Substitute any ingredient and call it your own.
Here goes mine.
These are the ingredients I used:
1 1/2 Pounds Ground Beef
1 Cup of Oats
1 Cup Shredded Potato

1 Egg
2 Heaping Tablespoons of Worcestershire Sauce
1 Teaspoon Hungarian Paprika (I use Hot Paprika for a kick)
1 Clove Minced Garlic
1 Sprig Parsley Diced
1 Teaspoon Salt
1/2 Teaspoon Black Pepper
Lots of Ketchup
Preheat Oven to 350 degrees.
In a large mixing bowl mix all ingredients except ketchup. Form into loaf pan. I like to use a square pan. I think the meat cooks more evenly but it really makes no difference. Cooking time is the same.
Spread a generous amount of ketchup on top ~ I also add a little chili sauce for extra flavor.
Pop in the oven for approximately 1 hour 20 minutes.
