This post is another fresh out of the garden summer side. If you have never been to the south and sampled real southern fried green tomatoes, well you don’t know what you are missing! This dish is a must if you are fortunate enough to have access to green tomatoes.
Round up the following ingredients:
5 Medium to Large Green Tomatoes
3 Yellow Squash
3 Cups Panko Bread Crumbs
1 Cup Medium Grain Corn Meal
1 Cup Milk
1 Egg
1 Tablespoon Salt
1 Teaspoon Pepper
Oil for frying
And a well Seasoned Cast Iron Skillet
Mix dry ingredients together in large Ziploc bag and set aside. Mix all wet ingredients in a shallow bowl.
Slice tomatoes and squash but not to thin. Dip into milk bath and then place in bag and shake until covered. Approx 5 or 6 slices at a time. A seasoned cast iron skillet is best for frying. Fill iron skillet with vegetable (approx. 1 inch of oil)
Heat oil and test with one veggie slice…oil should be popping. Fry until golden brown on both sides.
Place on platter lined with paper towel for drying. Garnish with Parsley and you are good to go!
